                MIMO I would modify the recipe slightly : 1st substitute BENECOL a buttery smooth primarily canola oil spread , found in most Super Markets , for the coconut oil. Benecol states clearly on the package that it is "Proven To Reduce Cholesterol"
                2nd Most new Microwaves have a Sensor cook function for Potatoes as mine does. Simply place the potato or potatoes into a microwave , Select Potato from the sensor cook function, place in the Potato and about 7-8 minutes later the potato is done , SAVING considerable time over the conventional oven!

                  I do not have a cholesterol problem - but thanks for the Benecol info for those who may.

                  I microwave my sweet potatoes - I use the oven only when it is being used for another purpose and I can sneak in the sweet potatoes on the side.

                    Good Morning To All! I must preface the following with the disclaimer that I am not a medical doctor or nutritionist, but I have a BA, MA in science and had taken a course in Biochemistry. A chiropractor once told my dad that any benefit he received from nutritional supplements was probably psychosomatic, and that he was wasting his money taking them. My dad had gone to the chiropractor for a sciatic condition, and at the time was undergoing 2 treatments per day ......all to NO AVAIL! My dad took it upon himself to undergo a walking and mild exercise program , combined with some nutritional supplements. The sciatic pain completely disappeared in about a month, and he never returned to another chiropractor for the remainder of his life.
                    The chiropractor, only in his fifties, while playing Santa at an elementary school dropped dead in a chair and fell down........my dad with his mild walking , exercising program and nutritional supplements lived to the ripe old age of 98. Yes genetics definitely played a part in my dad's longevity , but I never will discount a sensible diet, mild exercise and a nutritional supplement program!
                    Folks there are no magic supplements , and you should ALWAYS consult with a physician before taking any nutritional supplements.
                    3 supplements that are gaining in popularity are, CoQ10 , Alpha Lipoic acid and Acetyl L-Carnitine ......I take them all.
